Boil 4 cups of water.Put in the ginger,spring onion and then the fish maw.B ring to the boil and cover the lid.Leave the fish maw in the water overnight.Rinse the next morning.Cut into pieces.
Put the fish maw into a double-steaming pot.Add rock sugar and 1.5 cups of boiling water.
Steam for 1 hour.In a separate pot,boil the milk.Pou r the hot milk into the double-steaming pot.Keep on steaming for 45 minutes Serve.
